What food intolerance is

Food intolerance occurs when the body has difficulty digesting, metabolizing or assimilating, fully or partially, a substance found in food. This is usually due to a lack of the enzymes needed for proper digestion and absorption, which ends up activating the immune system against these products.

Research shows that food intolerance may be associated with IgG antibodies raised by the immune system when we eat certain foods. Studies describe more than 150 associated signs and symptoms.
